Vineyard and terroir
The Riesling fruit comes from the estate’s vineyards in the Garda region.
Vinification
The grapes are harvested by hand early in the morning at the beginning of September. Vinification is carried out with complete protection from oxygen. The crushed grapes are cooled to 10 °C and macerated for six hours before pressing. The must undergoes static settling overnight, followed by fermentation at a controlled 17 °C for around 12 days. Fermentation is stopped at 8–9 g/L of residual sugar, after which the wine is racked and chilled.
Ageing
The wine rests on its fine lees until April of the following year and is stabilized before bottling.
