Vineyard and terroir
The Sauvignon Blanc is grown in the estate's vineyards in the Garda region, at 120–130 metres above sea level on southeast-facing slopes. The soils are limestone moraine mixed with gravel and sand.
Grapes
Three Sauvignon Blanc clones are used: one Italian and two French.
Vinification
The grapes are picked at optimal ripeness, destemmed and crushed. The must is chilled and pressed after a short period of skin contact, which helps achieve good extraction. Part of the must is fermented in new barriques and the rest in stainless steel tanks. When fermentation is complete, the wine is chilled to prevent malolactic fermentation and, in any case, to reduce acidity.
Ageing
The wines are blended in March, and the finished blend is bottled.
