Vineyard and terroir
Produced around Butera in central-southern Sicily, Symposio interprets a Bordeaux-style blend through the estate’s Sicilian terroir.
Grapes
65% Cabernet Sauvignon, 30% Merlot and 5% Petit Verdot. Cabernet Sauvignon contributes freshness, Merlot fruit, and Petit Verdot a savoury dimension.
Vinification
The varieties are harvested manually into crates at different times, based on their individual ripeness and the conditions of the vintage. The best bunches are selected. Each variety ferments separately in stainless steel at a controlled temperature and remains in maceration for 30 days. Malolactic fermentation follows immediately after racking, after which the blend is assembled.
Ageing
Ageing lasts 18 months: 60% of the wine matures in large 30 and 60 hl Slavonian oak barrels, while 40% is held in 350 L tonneaux of first, second and third use. A further period of bottle ageing follows.

Tasting profile
Dense, impenetrable ruby red. Blueberry and other small woodland fruits open the bouquet, accompanied by chocolate, spices and a fresh balsamic note. The palate has imposing structure, balanced by good acidity and smooth tannins.
Serving and pairing
Serve at 16–18 °C. Suitable for refined meat dishes and traditional Sicilian preparations such as Pasta alla Norma and Farsumagru.
Label / history
The Greek-derived name evokes conviviality, celebrations and shared emotions. The wine reflects the European character associated with Sicily’s historic nobility while retaining a Mediterranean profile.
