Vineyard and terroir
The grapes come from hillside vineyards around Butera in central-southern Sicily. Carizza takes its name from the Sicilian word for “caress,” a reference to the gentle character of this Insolia.

100% Insolia.
Vinification
Grapes picked at full ripeness are gently pressed. The must ferments in stainless-steel tanks at a controlled 16–18 °C.
Ageing
The wine remains on its lees for 6 months, followed by a few months of bottle ageing.
Technical data
Insolia Sicilia DOC. Alcohol: 13% vol. Available in 375 ml and 750 ml bottles.
Tasting profile
Light, bright golden straw-yellow with subtle green reflections. The broad bouquet combines broom flowers, cantaloupe and exotic fruit, particularly pineapple and mango; the introductory profile also evokes mimosa. Rich and harmonious on the palate, with a fresh, delicate character and a gentle sweet-almond note.
Serving and pairing
Serve at 10–12 °C. Pair with vegetable-based first courses, fish soups, shellfish and white meats.
