Grapes
The blend is Corvina, Molinara and Rondinella.
Vinification
The grapes are picked by hand and placed in small crates to dry for 30–40 days. The berries lose moisture and their sugars concentrate. During drying, changes in the skins help balance the finished wine: the tannins soften, the aromas become more complex and the texture grows more velvety. After gentle pressing, the must ferments slowly at a low temperature to preserve purity and balance.
Ageing
The wine is aged for two years in oak barrels, then rests in bottle to develop greater harmony.
Tasting profile
Rich and full-bodied, with the depth and character of a fine Amarone. The structure is warm and generous, and the texture velvety.
