Vineyard and terroir
Piemme comes from the 1.5 ha Pian di Fiora vineyard at Pereta, situated 200–250 m above sea level and planted in 2000. The rows have an east–west exposure, are Guyot trained and stand at a density of 6,250 plants per hectare. Yield is 40 q/ha, equivalent to 4,000 kg/ha.
The technical sheet describes tuffaceous soil with abundant coarse material, rich in alabaster and containing a small proportion of gypsum. The wine page characterizes the site more broadly as exceptionally rich in gypsum and clay minerals. Intense sunlight and the constant maritime influence shape its Mediterranean setting, with salt carried in the air.
Grapes
100% Petit Manseng. Fattoria Le Pupille began researching the variety in 1996 as part of a project to create a substantial white wine in an area traditionally associated with reds.
Vinification
The grapes are harvested in the first half of September. Alcoholic fermentation takes place at 18°C in 500 L tonneaux.
Ageing
After alcoholic fermentation, the wine remains in the same 500 L tonneaux for a further 16 months, followed by another 12 months of bottle ageing.
Technical data
The 2023 technical sheet records 15% alcohol and total acidity of 7.5 g/L. Production is limited to 2,200 bottles, offered in 0.75 L and 1.5 L formats.
Tasting profile
Bright golden yellow. The nose brings together broom blossom, chamomile and yellow rose with pineapple, white melon and candied citron, followed by aromatic herbs and a nuance of vanilla. The palate is full, rounded and enveloping, balancing freshness with softness. The finish is exceptionally long and gradually turns toward almond tones.
Serving and pairing
Suggested pairings are spaghetti with bottarga and foie gras bonbons with hazelnuts.
Label / history
The name Piemme refers to Petit Manseng. The project began with the study of this variety in 1996; the vineyard was planted in 2000, and the first vintage produced was 2018. Conceived as a challenge to make an important white wine in red-wine country, Piemme is among the estate’s rarest labels because of its very limited production.
