Vineyard and terroir

The grapes come from 3 ha of vineyards around Pereta, at 200 m above sea level. The sites face south-east and have chalky soils with substantial skeletal material of tuffaceous origin. The current vineyard was planted in 2001 at a density of 5,200 vines per hectare and is trained to spur-pruned cordon. Yield is 15 q/ha (1.5 t/ha).

Blend proportions vary by vintage. Latest published vintage (2022): 34% Semillon, 33% Traminer and 33% Sauvignon.

Vinification

The grapes undergo appassimento on the vine. The shoots are cut in mid-September, leaving the fruit to dry for approximately 15 days, followed by harvest in late September. After pressing, the grapes are vinified under temperature control at 15–18°C, with fermentation at 15°C.

Ageing

The wine matures for nine months in stainless steel and subsequently receives prolonged bottle ageing.

Technical data

The 2022 vintage has 13% alcohol, total acidity of 6.2 g/L and residual sugar of 140 g/L. Production totals 2,100 bottles, offered in a 0.375 L format.

Tasting profile

Golden yellow with amber reflections. The aromatic profile brings together persimmon, almond and dates with cinnamon and chestnut-honey notes. The palate is envelopingly sweet, warm and velvety.

Serving and pairing

Suggested pairings are Il Fiorino Riserva del Fondatore cheese and foie gras escalope served with Santa Fiora onion preserve.

Label / history

First produced in 1994, Solalto grew from Elisabetta's desire to make a passito in Maremma. Its label reproduces a childhood drawing by Elisabetta's elder daughter, Clara: an instinctive depiction of their land embraced by the sea and illuminated by the sun, connecting the wine with family, place and tradition.
