Vineyard and terroir
The grapes come from estate vineyards in Monsanto, Barberino Tavarnelle. The sites lie along a ridge: half face the northern valley towards Barberino Tavarnelle, while the rest occupy the sunnier slope towards Castellina in Chianti. Soils are clay-limestone with sections of schist, galestro and sandstone. The vines are Guyot-trained, with yields of 30 hl/ha.
Grapes
100% Sangiovese. The wine is made in limited quantities from selected unripe bunches removed during the green harvest at the end of August.
Vinification
The bunches enter a chilled tank upon arrival at the cellar. The liquid is immediately drawn off by saignée, limiting contact with the skins and preventing colour extraction. Fermentation takes place in temperature-controlled stainless-steel vats at approximately 13°C.
Technical data
Igt Bianco di Toscana. Approximately 13% vol. Production is about 2,000 bottles, available in 0.75 l format.

Early-picked Sangiovese provides freshness and aromatic expression in a white-wine style.
Label / history
Created as an experiment in expressing Sangiovese beyond red wine. The first vintage was 2024, and bottling takes place during the first months of the year following harvest.
