Vineyard and terroir
The grapes are grown in Monsanto–Barberino Tavarnelle on south- and south-east-facing sites with clayey galestro marl soils. The vines are Guyot-trained.
Grapes
80% Malvasia Bianca, 15% Verdea (San Colombano) and 5% Sangiovese.
Vinification
The wine follows the Florentine Vinsanto tradition. Hand-harvested bunches are suspended from the ceiling of a well-ventilated drying room for three to four months and allowed to dry completely. Once the berries have developed a high sugar concentration, they are removed from the stems by hand and gently pressed in small purpose-built presses. The resulting sweet amber juice is placed in caratelli together with the “mother,” the concentrated residue retained from earlier vintages.
Ageing
Five to six years in oak and chestnut caratelli of various sizes.

Maturation produces a plush mouthfeel and aromas of dried fruit.
