Vineyard and terroir
The grapes come from estate vineyards in Monsanto, Barberino Tavarnelle. The sites lie along a ridge: half face the northern valley towards Barberino Tavarnelle, while the remainder occupy the sunnier slope towards Castellina in Chianti. Soils are clay-limestone with sections of schist, galestro and sandstone. The vines are Guyot-trained, with yields of 30 hl/ha.
Grapes
Sangiovese and Ciliegiolo. Selected bunches are picked during the green harvest at the end of August, allowing a limited quantity of rosé to be produced.
Vinification
The grapes are harvested by hand and transferred to a chilled tank. Only the free-run juice is drawn off immediately by saignée. Fermentation takes place in temperature-controlled stainless-steel vats at approximately 13°C.
Technical data
Toscana Rosato IGT. Approximately 13% vol. Annual production is about 3,000 bottles, available in 0.75 l format.
Tasting profile
Medium-bodied, with lively freshness and the characteristic aromas of Sangiovese and Ciliegiolo.
Serving and pairing
Pairs with cured meats and cheeses, white or vegetarian ragù, and fish dishes.
Label / history
First produced in 2021. Bottling takes place during the first months of the year following harvest.
