Vineyard and terroir
The vineyards lie a short distance east of Taranto on the Salento Peninsula. Their red clay soils are influenced by breezes from the Ionian Sea, which contribute delicate flavours and a fresh, persistent palate.
Grapes
100% Primitivo. The variety’s name is associated with its early ripening, from the Latin primitivus. Harvest takes place at the end of August.
Vinification
The grapes are destemmed and crushed, then macerated at a controlled temperature for 8–10 days with regular pumping over. After racking, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 4–5 months in used American and French oak barriques.
Tasting profile
Intense ruby red with violet reflections. The bouquet is complex and dominated by red fruit. Full-bodied, soft, harmonious and moderately tannic. Ready to drink.
Serving and pairing
Serve at 16–18°C. Pair with rich first courses, red meat, game and medium-aged cheeses.
