Vineyard and terroir
The vineyards lie between Sava and Manduria in Salento, at the heart of the Primitivo di Manduria denomination. Sunlight and proximity to the Ionian Sea shape the growing conditions. The Primitivo vines are trained as traditional bush vines, locally called alberello, and are more than 30 years old.
Grapes
100% Primitivo.
Vinification
The grapes are destemmed and crushed, then macerated at a controlled temperature for 8–10 days with regular pumping over. After draining, malolactic fermentation takes place in stainless-steel tanks.
Ageing
Six months in used American and French oak barriques.
Tasting profile
Ruby red with dark violet nuances. The intense, complex and fruit-led bouquet shows small red fruits, especially cherries and blackberries. The palate is velvety, soft and warm, with noticeable tannins and a long finish.
Serving and pairing
Serve at 16–18°C with savoury pasta dishes, lamb, game in rich sauces or aged cheeses.
