Vineyard and terroir
The fruit is grown in Puglia. Pampanuto and Bombino grow in deep limestone soils at 180–200 m above sea level, while Chardonnay is planted at 350 m on rocky soils. Yields do not exceed 110–130 hL/ha.
Vinification
The grapes are harvested both by hand and mechanically. Chardonnay is picked in mid-August, followed by the other varieties in late September. Fermentation takes place in stainless-steel tanks for 9–10 days at a controlled temperature of 18 °C.
Ageing
The wine rests for 3–4 months in glass-lined cement vats.
