Vineyard and terroir
Barbaresco Pajé Riserva is a small selection from old vines in the historic Pajé vineyard, situated in the heart of the village of Barbaresco.
Vinification
The Riserva protocol includes submerged-cap maceration lasting 80–90 days.
Ageing
Ageing is exceptionally long and takes place in oak casks, concrete and ceramic. For Riserva wines, this period may be twice as long as for the corresponding standard appellation wines. Barbaresco Pajé Riserva remains in the cellar for at least an additional decade before release.
Technical data
Production is restricted to no more than a few hundred bottles. The vintages presented are 1985, 1988, 1989, 1990, 1993, 1995, 1996, 1997, 1998, 1999, 2000, 2001 and 2004. Riserva wines are generally released approximately 15–20 years after harvest.
Label / history
The black label was adopted in recent years as the distinguishing feature of the Riserva wines.
