Vineyard and terroir
The Nebbiolo grows in the province of Barolo at 380 m above sea level. The vineyards are farmed organically, using only natural fertilisers. Careful vine selection and removal of half the bunches restrict yields: in favourable, warm years, one vine produces enough fruit for one bottle, while in rainy years several vines are required.
Vinification
The grapes are harvested at full ripeness in late September and gently pressed. Maceration lasts 12–14 days in temperature-controlled stainless-steel tanks, followed by malolactic fermentation.
Ageing
The wine matures for two years in oak barrels and a further year in bottle.
Tasting profile
Rich and mature, with deep flavour, excellent structure and an elegant, refined character.
Serving and pairing
Decant for two to three hours before serving.
