Vineyard and terroir
Sauvignon Blanc is grown in the La Stella vineyard at an average elevation of 520 m above sea level. The vines are 20 years old. Harvest takes place in mid-August during the cool early hours of dawn.
Grapes
100% Sauvignon Blanc.
Vinification
The grapes are immediately destemmed and crushed, then gently pressed without the addition of sulfur. The must settles naturally for 24 hours before alcoholic fermentation in small containers.
Ageing
Maturation takes place in steel and cement.
Serving and pairing
Serve at 8–10 °C.
