Vineyard and terroir
Pratola comes from a 4 ha vineyard planted at 350–400 m above sea level, with north/south exposure and a density of 5,000 vines per hectare. The site receives ample sunlight while remaining protected from the most intense rays. Pronounced night-time temperature changes encourage slow, even ripening. The medium-textured soil contains abundant Alberese rock fragments and limestone, contributing mineral character and natural acidity. The vines are 16 years old, Guyot-trained, and yield an average of 1 kg per plant.
Grapes
100% Colorino. The vineyard formerly produced a varietal Merlot through the 2015 vintage; since 2018, Pratola has been made entirely from the native Colorino grape.
Vinification
Harvest takes place during the first half of October. Maceration lasts 10–12 days at approximately 28°C. Malolactic fermentation occurs in stainless steel.
Ageing
The wine spends at least 18 months in barriques of various ages, followed by at least 6 months in stainless steel and at least 1 year in bottle.
Technical data
Annual production is approximately 7,000 bottles.
Tasting profile
Deep, concentrated ruby red with violet reflections. Black cherry leads the aroma, followed by chocolate, cinnamon, tobacco and black pepper. The palate is soft and fleshy, framed by delicate tannins, with a notably persistent finish.
Serving and pairing
Serve at 16°C with grilled meat or medium-aged cheeses.
