Vineyard and terroir
The fruit comes from several plots in Località Capraia, covering 45 ha at an average elevation of 300 m above sea level and encompassing various exposures. The medium-textured soils are rich in clay and Galestro stone. Vine age ranges from new plantings to 35 years, with a density of 5,000 vines per hectare and an average yield of 1.2 kg per vine. Both spur pruning and cane pruning are employed.
Sangiovese is selected from the cooler parts of the estate and harvested early to retain freshness and finesse.
Grapes
100% Sangiovese.
Vinification
Half of the must is produced by direct pressing. The other half remains in contact with the skins for four hours before the cap is raised. The two portions are reunited, and alcoholic fermentation continues for 7–8 days at 15–17 °C.
Ageing
The wine remains on its fermentation lees for two months before bottling.
Tasting profile
Pale antique pink in colour, with delicate aromas of hawthorn, rose and wisteria over white fruit. Light tropical nuances found on the nose return on the palate alongside concentrated fruit. The overall profile is elegant, fresh and mineral, with an emphasis on finesse and drinkability.
Serving and pairing
Serve at 10 °C. Suitable as an aperitif and with medium-aged cured meats, savoury pies and appetizers. It can also accompany pasta with vegetable- or fish-based sauces, white meats, and steamed or baked fish.
