Vineyard and terroir

The 1.2-ha Canale vineyard lies in Località Capraia at an average elevation of 250 m above sea level, with various exposures. Its 15-year-old vines are planted at 4,000 vines per hectare, trained and pruned to Guyot, and yield an average of 1.5 kg per vine. The vineyard soil is described as medium-textured.

The wider Castellina in Chianti terroir combines Pliocene-era Galestro and Alberese rocks, producing deep, cool and stony soils. Harvest takes place in September.

Grapes

100% Vermentino.

Vinification

The wine undergoes light maceration. The technical description gives 10–15 days on the lees at controlled temperature, while the tasting text attributes its tannic edge to 10–15 days on the skins.

Ageing

Maturation takes place in steel and cement.

Tasting profile

Golden and vivid in appearance. Orange zest, Mediterranean herbs and chamomile lead the aroma, followed by dried apricot and black tea. The palate is taut, saline and fresh, with a discernible tannic edge from skin contact. The finish is long, citrus-driven and iodine-rich, with almond and resin nuances. The wine is unfiltered and combines freshness, savouriness, structure and minerality.

Serving and pairing

Serve at 10 °C. Pair with raw or marinated shellfish; fried, grilled or baked fish; seafood pasta; vegetables; grilled lamb or veal; soft cheeses; or salads with arugula.
