Vineyard and terroir
Ridolfo offers an interpretation of the terroir of Monti in Chianti, within the Chianti Classico territory. The 2019 wine is certified organic.
Grapes
An equal blend of 50% Pugnitello and 50% Cabernet Sauvignon.
Vinification
For the 2019 vintage, Cabernet Sauvignon was picked from 11 to 18 October and Pugnitello on 19 October. Pugnitello fermented for 12 days, while Cabernet Sauvignon fermented for 17 days and underwent 25 days of maceration. Fermentation took place at 26°C.
Ageing
The 2019 vintage matured for 26 months in Allier oak barriques: 20% first-passage, 45% second-passage and 35% third-passage barrels. Bottling took place on 31 March 2022, followed by 36 months of refinement in bottle in the estate cellar.
The general profile describes maturation for 24 months in Allier oak barriques and tonneaux, followed by 36 months in bottle.
Technical data
The 2019 vintage has 14.43% alcohol, total acidity of 5.75 g/L, volatile acidity of 0.59 g/L, pH 3.37, residual sugar of 0.24 g/L and total dry extract of 29.43 g/L. Free sulfur dioxide is 26 mg/L and total sulfur dioxide is 63 mg/L.
Production comprised 1,608 individually numbered 1.5 L magnums and 20 individually numbered 3 L jeroboams.
Tasting profile
Cabernet Sauvignon contributes polished fruit tones of blackberry and dried plum, a well-integrated eucalyptus-like balsamic character, silky tannins and complex herbal nuances. Pugnitello brings sour-cherry fruit and a more rustic edge. Pepper and licorice complete the profile. The wine is complex and forceful, with excellent acidity and a balance between refinement and rusticity.
Serving and pairing
Suggested dishes include beef cheek with exotic seasoning, venison medallions with blueberry sauce, stufato alla Sangiovannese, spit-roasted meats, grilled pigeon, pigeon with caramelized figs and mustard, and ravioli filled with finocchiona ragù accompanied by Tuscan pecorino sauce and wild-fennel oil.
Label / history
Ridolfo was conceived by Marco Ricasoli Firidolfi around the complementary character of Cabernet Sauvignon and Pugnitello, bringing an international variety together with a Tuscan one. Its name refers to Ridolfo and to a family lineage whose chivalric history reaches back to the 10th century.
