Vineyard and terroir
The vineyards occupy steep slopes facing east and southeast, on medium-textured clay soils. Yields are limited to 8,000 kg/ha, with a planting density of 5,000 vines per unit area.
Grapes
The blend comprises 70% Sangiovese, 15% Sagrantino, and a combined 15% Cabernet Sauvignon and Merlot.
Vinification
The grapes are harvested either by hand or mechanically, depending on the variety, from mid-September to mid-October. Each variety is harvested and vinified separately. After sorting and gentle pressing, the fruit macerates on the skins for 10–12 days. Alcoholic fermentation takes place in temperature-controlled stainless-steel tanks without added commercial yeast cultures. The wine clarifies naturally through decanting and racking.
Ageing
The wine matures for one year in Slavonian and French oak barrels, followed by at least four months in bottle.
