Vineyard and terroir
The fruit is grown in Umbria on steep, east- and southeast-facing slopes with medium-textured clay soils. Yields are limited to 50 centners per hectare, and the planting density is 6,500 vines per unit of area.
Grapes
The blend comprises 40% Sagrantino, 30% Montepulciano and 30% Sangiovese.
Vinification
The grapes are harvested by hand, with Montepulciano and Sangiovese picked in late September and Sagrantino in mid-October. Each variety is harvested and vinified separately. After sorting, the grapes are gently pressed and macerated on the skins for 20–22 days. Alcoholic fermentation takes place in stainless-steel tanks at a controlled temperature.
Ageing
The wine matures in French oak barrels for two years, followed by at least six months in bottle.
