Vineyard and terroir
Roccolo Grassi has 13 ha of vineyards on fertile soils. Vines aged between 10 and 40 years are used for its traditional Veneto wines, including Recioto.
Vinification
The grapes are harvested by hand in September and October, then dried for approximately three months, until February, before pressing. Maceration lasts 30 days at 25–26 °C. The must is then transferred to barriques for malolactic fermentation.
Ageing
The wine matures in barriques for just under two years, with regular lees stirring. It is then filtered and bottled, followed by a further 10 months of bottle ageing.
Label / history
Azienda Agricola Roccolo Grassi was founded by the Sartori family in 1996. It takes its name from the estate’s principal vineyard, Roccolo Grassi.
