Vineyard and terroir

The estate holds about 13 hectares: roughly 9 planted with red varieties and 4 suited to white varieties. Besides its vineyards in the Valpolicella area, it owns land in the eastern part of the Soave DOC. All of the region's traditional grape varieties are grown, and most vines are 10 to 30 years old.

Vinification

About 70% of the grapes are used fresh and about 30% are lightly dried for 20 days. The share of dried grapes and the length of drying change from year to year. The gentle dehydration concentrates flavours, enhances aromas and adds depth without removing the wine's natural freshness. The estate pays particular attention to fermentation.

Ageing

After fermentation the wine spends around 20 months in oak barrels before blending and bottling. The estate uses carefully selected large French oak barrels, and occasionally Slavonian oak. A long period of bottle ageing follows, which makes the wine more harmonious and expressive.

Tasting profile

Refined and complex, with depth and natural freshness. It is an ambitious wine with a distinctive character. Antonio Galloni of Wine Advocate names elegance and power as the consistent signature of the estate's wines.

Label / history

Roccolo Grassi was founded in 1996 and takes its name from the estate's most important vineyards. Bruno Sartori runs it with his daughter Francesca and his son Marco. The estate combines traditional winemaking with modern methods.
