Vineyard and terroir
The fruit comes from Veneto in northeastern Italy. The vineyard's 40-year-old vines grow on volcanic basalt soils and produce highly concentrated grapes with complex fruit character.
Vinification
The grapes are harvested by hand in late September and laid on trays to preserve their quality. They dry until December, losing excess moisture while retaining aroma and sweetness. Maceration lasts one week, followed by a 21-day fermentation with daily pump-overs to extract colour and tannin.
Ageing
The wine matures for at least 26 months in medium-sized French oak barrels, which contribute spicy notes and soften its texture. It then rests in bottle for a further 24 months before release.
Tasting profile
Rich and expressive, with concentrated, complex fruit and spicy notes. The palate is soft, inviting and structured by extracted tannins.
Label / history
Roccolo Grassi was founded in 1996 and takes its name from the estate's most important vineyards. The winery is managed by Bruno Sartori and his children, Francesca and Marco.
