Vineyard and terroir
The Chardonnay and Pinot Nero come from the Pozzo and Anfiteatro vineyards in Calino, Cazzago San Martino. The sites face north and northwest, on a slope where several geological influences meet. Permeable soils and an unusual limestone vein contribute structure, aromatic character and a direct style. The vines average 28 years of age.
Vinification
The grapes are hand-harvested into small crates during the second ten-day period of August. After chilling, the bunches are gently pressed to obtain only the free-run must. Each vineyard site is vinified separately. Fermentation takes place in stainless steel at 13–14 °C, while 50% of the Chardonnay is vinified in French oak barrels. In May, a tirage liqueur of cultured yeast and organically grown cane sugar initiates secondary fermentation in bottle.
Ageing
The wine rests on its lees for at least 120 months. After disgorgement and the addition of dosage liqueur at 1 g/l, it remains in the cellar for at least another six months.
