Storia
Ronco Severo grew out of a farming family that had worked the land since the postwar years, raising livestock, growing crops and tending vines. Stefano Novello grew up in this family, with wine present in his life from childhood. He later gained considerable experience in commerce and sales.
Eventually he felt the need for a new direction and completely reshaped the family business, which no longer matched his vision of winemaking. He chose to focus on artisanal, environmentally friendly wines, a path that eventually led to organic certification.
Terroir
The vineyards lie at around 150 m above sea level in Prepotto, in the province of Udine, Friuli-Venezia Giulia. The soils contain the sandstone and marl typical of the Friulian hills, known locally as "ponca."
Vinificazione
The vineyards are farmed organically, with respect for nature and the vine's natural cycles.
In the winery, Stefano Novello's work is intended only to complement what nature has already achieved. Production is in very limited quantities each year, yet the range offered is broad. The wines are described as organic, with a distinctly modern character, combining richness and structure with elegance and an easy-drinking style.
Filosofia
Stefano Novello ties the organic approach closely to the character of each individual terroir. He believes it is the only way to create a genuine connection between a wine and the place it comes from.
