Vineyard and terroir

The wine originates in the white-grape rows of the 2 ha “Poggio Piglia” vineyard at Chiusi. The grapes are picked when the first signs of noble rot appear.

Grapes

Trebbiano and Malvasia; exact proportions are not given. It is a non-vintage wine assembled from multiple vintages to achieve balance, drinkability and versatility.

Vinification

The fruit is fermented in tonneaux. The style draws on the Sauternes method but is conceived with a fresher interpretation. Only grapes are used, with no added sulphites or other additions.

Ageing

Matured for 12 months in tonneaux and refined for six months in bottle.

Technical data

Alcohol is 13.5%. The current product page gives 81 g/L reducing sugars, pH 3.79 and total acidity of 5.90 g/L. The selected 2018 technical sheet instead gives 63 g/L residual sugar, pH 3.54 and total acidity of 9.75 g/L. Annual production is 3,500 bottles. It is sold in a 750 ml, 395 g Burgundy bottle. The current product page specifies a bioplastic closure, while the 2018 sheet specifies screwcap.

Tasting profile

Deep golden yellow with pronounced amber reflections. The broad, generous aroma evokes dried apricot, acacia honey, toasted hazelnut, caramel, dried fruit, aromatic herbs and flint. The palate is soft and warm, echoing the aromas while retaining a fresh vein and a long finish.

Serving and pairing

Serve at 16–18°C. It can accompany sweet or savory food and can also be poured as an aperitif or after dinner. Expected drinking window: 8–10 years.
