Vineyard and terroir
The vineyards are located on the Salento Peninsula in Puglia and receive full sun exposure. Red and clay soils contribute freshness, flavour and minerality.
Grapes
Malvasia Bianca, Chardonnay and Bombino Bianco.
Vinification
The grapes undergo gentle pressing at very low temperature, followed by cold pre-fermentation static clarification. Yeast is inoculated into the clear must, and alcoholic fermentation proceeds in stainless-steel tanks at 11°C.
Ageing
The wine remains on its fine lees for a further 2–3 months.
Tasting profile
Straw yellow with golden reflections. The aroma is intense, persistent and fruit-driven, with notes of ripe yellow-fleshed fruit. The palate is fresh, approachable, pleasant and harmonious, with a persistent finish.
Serving and pairing
Serve at 10–12°C with fish appetizers, fish soups, soft cheeses or pasta dressed with light sauces. Winemaker: Danilo Gizzi.
