Vineyard and terroir
The vineyards lie a short distance east of Taranto on the Salento Peninsula. Their red soil is rich in iron oxides and rests over calcareous rock. Breezes from the Ionian Sea help preserve delicate grape flavours and contribute freshness and persistence.
Grapes
100% Negroamaro.
Vinification
The grapes are destemmed and crushed, then macerated for 8–10 days at controlled temperature with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 4–5 months in second-use American and French oak barriques.
Tasting profile
Ruby red with purple reflections. The bouquet is intense, vinous, spicy and fruity, showing blackcurrant and other dark berries. Medium-bodied and velvety, the palate balances freshness with warming sensations and finishes long and savoury.
Serving and pairing
Serve at 16–18°C. Its structure and aromatic intensity suit typical Puglian dishes, especially orecchiette with broccoli rabe and goat cheese. Winemaker: Danilo Gizzi.
