Vineyard and terroir
The grapes grow between Sava and Manduria, at the heart of the Primitivo di Manduria production area in Salento. Warm sunshine and proximity to the Ionian Sea shape the site. The traditional bush-trained vines are more than 30 years old and contribute to the wine’s aromatic character.
Grapes
100% Primitivo.
Vinification
The grapes are destemmed and crushed, then macerated at controlled temperature for 8–10 days with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.
Ageing
Maturation lasts 6–8 months in second-use American and French oak barriques.
Tasting profile
Ruby red with dark violet highlights. The nose is intense, complex and fruit-driven, with cherry, blackberry and other small red-fruit notes. The palate has a substantial yet soft, velvety structure; it is warm, moderately tannic and notably persistent.
Serving and pairing
Serve at 16–18°C. Suitable partners include robust first courses, lamb, game with elaborate sauces and hard cheeses. Further suggestions include pasta with meat sauce, red meat, moderately spiced roasts and semi-mature cheeses.
