Vineyard and terroir
The grapes come from vineyards between Sava and Manduria, in the heart of the Primitivo di Manduria production area in Puglia. Warm sunshine and proximity to the Ionian Sea are defining influences. Traditional bush-trained vines more than 30 years old contribute to the wine’s aromatic character.
Grapes
100% Primitivo.
Vinification
The grapes, including a portion harvested overripe, are destemmed and gently crushed. Fermentation and maceration take place at 24–25°C for 12–14 days with periodic pump-overs. The wine is then racked and completes malolactic fermentation in stainless-steel tanks.
Ageing
Maturation comprises 12 months in second-use French and American oak barrels followed by a further 12 months in cement.
Tasting profile
Ruby red with violet reflections. The complex bouquet combines cherry, blackberry and blackcurrant with spice, vanilla, coffee and toffee. Full-bodied, with velvety tannins and a long, persistent finish.
Serving and pairing
Serve at 16–18°C. Pair with robust first courses, lamb, game accompanied by elaborate sauces, and hard cheeses.
