Vineyard and terroir
The vineyards lie in a warm, dry part of the Salento peninsula in Puglia. Clay-limestone soils remain comparatively cool and retain water through the very hot summer. The temperature range between day and night supports the vines’ elegance.
Grapes
50% Primitivo and 50% Merlot.
Vinification
The grapes are destemmed and crushed, then macerated at controlled temperature for 8–10 days with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 6–8 months in used American and French oak barriques.
Tasting profile
Very intense ruby red. The rich aroma recalls ripe red fruit, cherries and berries, complemented by cinnamon. Full-bodied and persistent, with velvety tannins and a pleasant aftertaste.
Serving and pairing
Serve at 16–18°C. Pair with grilled red meat, game, salami and seasonal cheeses. Fillet mignon with a balsamic-vinegar reduction is a featured pairing.
