Vineyard and terroir
The vineyards lie a short distance east of Taranto on the Salento Peninsula, growing on red and clay soils. Breezes from the Ionian Sea encourage delicate grape flavours and a fresh, persistent finish.
Grapes
100% Primitivo. The variety's name derives from the Latin primitivus, referring to its early ripening. The grapes are harvested at the end of August.
Vinification
The grapes are destemmed and crushed, followed by 8–10 days of maceration at controlled temperature with regular pump-overs. The wine is then drained, and malolactic fermentation takes place in stainless-steel tanks.
Ageing
Maturation lasts 4–5 months in used American and French oak barriques.
Tasting profile
Deep ruby red with purple reflections. The intense, fruit-led aroma recalls small red berries. Full-bodied, soft, moderately tannic and harmonious, it is intended for early drinking.
Serving and pairing
Serve at 16–18°C with flavourful cured meats, grilled red meat, game, smoked or herb-flavoured cheeses. It can also accompany strongly flavoured seafood, including swordfish with rosemary. Winemaker: Danilo Gizzi.
