Vineyard and terroir
The grapes are grown in the Province of Brindisi, in a warm, dry part of the Salento Peninsula. Clay-limestone soil helps keep the root zone cool and retain water during the very hot summer. The pronounced temperature difference between day and night contributes to the vines’ balance and the fruit’s character.

100% Susumaniello.
Vinification
The grapes are destemmed and crushed, then macerated at a controlled temperature for 8–10 days with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine is matured for six months in used American and French oak barriques.

Tasting profile
Very intense ruby red. The bouquet is clear, elegant, ethereal and complex, combining black cherries and plums in brandy with blackcurrant and blackberry jam, followed by nuances of juniper, nutmeg, liquorice and cinnamon. Full-bodied on the palate, with abundant velvety tannins and a persistent, pleasant finish.
Serving and pairing
Serve at 16–18°C. Its structure suits pappardelle with meat sauce, grilled or roasted meats, and mature cheeses.
