Vineyard and terroir
The grapes come from a restricted area between Piedmont and Liguria, near the fortress overlooking the town of Gavi. The vineyards occupy medium-to-high slopes with sandy soils rich in arenaceous marl.
Grapes
100% Cortese di Gavi.
Vinification
Harvest takes place at the end of September. The yield is 9.5 tonnes of grapes per hectare, equivalent to 66 hectolitres of wine. The grapes undergo gentle pressing, followed by fermentation without skins at controlled temperature.
Ageing
The wine matures in stainless steel and then spends a short period in bottle before release.
Technical data
Alcohol: 12.5% vol.
Tasting profile
A dry, straw-yellow white with a fragrant, delicate and fresh bouquet. Almond-blossom and mineral notes define the aroma. The palate is light-bodied, fresh and well balanced, with good acidity.
Serving and pairing
Serve at 8–12 °C with white meats or fish.
