Vineyard and terroir
The vineyards have limestone or calcareous-clay soils and favourable exposure. Moscato is particularly sensitive to climate and requires careful management of the factors governing ripening.
Grapes
100% Moscato Bianco. Muscat is presented as one of the oldest, best-known and most widely cultivated grape families, while Moscato is among Piedmont’s oldest noble varieties and was known to the ancient Romans.
Vinification
Harvest takes place during the first ten days of September. The vineyard yield is 10 tonnes of grapes per hectare, with a maximum grape-to-wine yield of 75%. White vinification excludes the skins and involves gentle pressing, refrigeration and filtration. Fermentation proceeds at controlled temperature.
Ageing
Maturation takes place in stainless-steel vats.
