Vineyard and terroir

Pinot Noir and Chardonnay are grown in the hills of Alta Langa. The two varieties are blended to produce a Brut sparkling wine by the traditional bottle-fermentation method.

Grapes

70% Pinot Noir and 30% Chardonnay.

Vinification

The grapes are selectively harvested by hand and gently pressed. Fermentation takes place in stainless-steel tanks at controlled temperature.

Ageing

The base wine matures for six months on the fine lees from fermentation. It then spends 30 months on the lees in bottle before disgorgement and dosage.

Tasting profile

Floral sensations are accompanied by exotic-fruit notes. The perlage is delicate and persistent, with an attractive toasted-bread aftertaste and a supple sense of warmth.

Serving and pairing

Suitable as an aperitif and particularly well matched with shellfish and other fish-based dishes. Cellar life is 2–3 years.

Label / history

This was San Silvestro’s first traditional-method sparkling wine. It is presented as Alta Langa D.O.C.G. Spumante Brut Metodo Classico.

Vintage notes

The 2015 vintage received 93 points in Luca Maroni’s 2021 edition of I Migliori Vini Italiani. The 2014 vintage received 90 points from Wine Enthusiast.
