Vineyard and terroir
The grapes come from the 11 villages in the Barolo wine-growing area. Patres is presented as San Silvestro’s most representative wine and as an expression of a territory historically associated with Barolo since the mid-nineteenth century.
Grapes
100% Nebbiolo.
Vinification
The grapes are harvested and selected by hand, then crushed and destemmed. Fermentation takes place in stainless-steel tanks at a controlled temperature. The wine macerates on the skins, with daily pumping of the must over the cap.
Ageing
The wine matures for 38 months, including at least 18 months in Slavonian oak casks. Bottle ageing follows the period in wood. Prolonged maturation in large casks develops elegance, balance and expressive character.
Tasting profile
Aromas of spices and dried flowers lead to a smooth, mouth-filling palate. Sweet tannins accompany the wine’s substantial structure.
Serving and pairing
Pair with game, braised veal, stewed meat, grilled fillet and other grilled meats, and mature cheeses. Cellaring potential is 10 years.
Label / history
The name Patres evokes the wine’s position as the “father” of the range—San Silvestro’s most representative Barolo and an introduction both for newcomers and established admirers of the appellation.
