Vineyard and terroir
The vineyard is located on Monte Ceriani and has permanent grass cover. Summer bunch thinning and green harvesting reduce yields.
Vinification
Ripe grapes are harvested by hand in two passes, the first in early September and the second in early October, contributing layered flavour while preserving acidity and structure. Gentle pressing is followed by cold maceration for 10–12 hours. Fermentation takes place at low temperature with selected yeasts.
Ageing
Until spring, the cap is pushed down once a week with a special stirrer rather than by hand. The wine is bottled in spring.
Tasting profile
Refreshing and layered, with fresh acidity and good structure.
Label / history
The wine takes its name from Monte Ceriani, the hill on which Sant'Antonio’s vineyard is located.
