Vineyard and terroir
The grapes come from vineyards in the municipalities of Sirmione and Pozzolengo. This area forms part of the morainic amphitheatre created when an ancient glacier retreated after eroding the Alps and forming Lake Garda. The lake moderates local temperatures, favouring healthy grapes and even ripening.
The vineyards are oriented north–south. Their soils are strongly clay-based and calcareous, with an abundance of mineral salts. Double overturned arch and Guyot are the principal training systems.
Grapes
Turbiana, also known as Trebbiano di Lugana.
Vinification
Fully ripe grapes are picked by hand during the first ten days of October. Vinification is conducted under reductive conditions, protecting the fruit and must from oxygen throughout the process.
After gentle crushing, the grapes enter the fermenters and undergo approximately 48 hours of pre-fermentation cold maceration, continuing until the cap rises. The juice is then drawn off and the skins are gently pressed. Following cold settling, the must ferments slowly with selected yeasts.
The name Folàr means “punching down” in the Verona dialect. This technique, more commonly associated with red wine, repeatedly submerges the cap of skins in the must during alcoholic fermentation. It enriches the wine with components from the skins, giving it greater structure and capacity to age.
Ageing
The wine remains on its lees in stainless-steel tanks until bottling.

Tasting profile
Straw yellow with golden highlights. The fragrance is expressive, inviting and elegant, combining intense fruit with floral notes. The palate is enveloping, soft and rich in fruit, balanced by pronounced, pleasant acidity. The finish is long and dry.
Serving and pairing
Pair with Venetian dishes such as linguine with clams or baked sea bass. It also suits first courses, risottos and fish. For optimal development, store bottles horizontally in a cool, dark place for up to 3 years.
Label / history
Folàr takes its name from the Veronese term for punching down, the cap-management technique used in its production.
