Vineyard and terroir
Produced in Montalcino, in the province of Siena, from vineyards situated at 280–320 m above sea level. The vines are trained to low spurred cordon. Harvest takes place in the first week of September.
Vinification
The must remains in contact with the skins for a few hours. Alcoholic fermentation then continues without the skins for 15 days. The wine is transferred to an autoclave for 120 days, during which the second fermentation produces the mousse.
Technical data
Alcohol: 12% vol. Production: 4,000 bottles. Available in 0.75 L and 1.5 L flute bottles.
Tasting profile
Delicate soft pink to bright cherry-pink in colour. The bouquet combines fruit and flowers, with notes of cherry, strawberry, lychee and blackberry. The perlage is fine, abundant and persistent. The palate is slightly sweet, light, fresh and savoury, yet full-bodied, balanced and intense, with a fine, persistent finish and harmoniously interwoven red-fruit and lychee notes.
Serving and pairing
Serve at 6 °C. Suitable as an aperitif and with white meats, vegetables, cured meats and medium-aged cheeses.
