Grapes
100% Sangiovese. The fruit was traditionally removed during vineyard thinning after mid-August; it is now harvested to make this ancestral-method sparkling wine.
Vinification
The grapes are picked by hand in the third week of August and pressed as whole bunches. The must undergoes static settling at 5 °C for several days, after which it is racked off its lees, inoculated and fermented in stainless-steel vats. Fermentation is interrupted while a few grams of residual sugar remain, allowing the wine to referment in bottle.
Ageing
The bottle is closed with a crown cap and is not disgorged, so any sediment at the bottom is natural. The wine rests in bottle for six months before release.

A deliberately straightforward, highly drinkable expression of Sangiovese.
