Vineyard and terroir
The grapes come from a 1 ha vineyard in the municipality of Acqui Terme, at coordinates 44.707748, 8.415893. The site lies at 400 m above sea level, faces south-east and was planted in 1986. Its red soils contain a substantial proportion of clay. The Dolcetto d'Acqui DOC zone encompasses 23 municipalities around Acqui Terme; Alto Monferrato's elevated hills and predominantly clay-based soils contribute notable freshness and acidity.

100% Dolcetto.
Vinification
The must macerates on its skins for 12 days in stainless-steel tanks, with two manual pump-overs each day. Following alcoholic fermentation, the wine is racked into stainless steel, where malolactic fermentation is completed.
Ageing
The wine matures for 20 months in stainless-steel tanks before bottling.
Technical data
The only format is 0.75 L. Scarpa uses a custom amber Burgundy bottle with an elongated neck and the winery trademark moulded into the glass.
Tasting profile
Deep ruby red with purple reflections. The intense, vinous bouquet combines red berries with delicate spice. On the palate it is soft and velvety, with good freshness and well-integrated tannins. Its ageing potential exceeds 15 years.
Serving and pairing
Suggested accompaniments include warm antipasti, cardoon flan, young cheeses and courgette omelette. Further pairings include cardo gobbo from Nizza Monferrato, anchovies, white meats, chicken wings and legs, dark poultry, liver, pulled pork, curry-spiced meats, grilled asparagus and artichokes, hare, cod with mashed potatoes, and mackerel.
