Vineyard and terroir
The grapes grow at the foot of the Fumane valley, 170 metres above sea level, in clay-limestone soil that gives the wine its distinctive structure.
Vinification
The grapes are harvested by hand, taken quickly to the winery and pressed immediately to preserve their freshness. Fermentation starts spontaneously in truncated cone-shaped steel tanks, which help control temperature and extraction.
Ageing
The wine is aged in stages: 12 months in 50 hL cement tanks, 6 months in 50 hL Slavonian oak barrels, and 9 months in bottle after bottling. This adds complexity, a velvety texture and subtle woody notes while preserving freshness and fruit character.
Tasting profile
Refined, easy-drinking and soft. The aroma is balanced and fruity, with hints of cinnamon and pepper. The palate is gently savoury and well structured, with velvety tannins and pleasant acidity. The finish is long, with lingering spice.
Serving and pairing
Pairs with aged cheeses, pasta, rice and mushroom dishes, and a variety of meats.
