Questo vino
Vineyard and terroir
The grapes grow at 170 m at the foot of the Fumane Valley, on clay-limestone soils that contribute freshness and richness.
Vinification
The grapes are harvested by hand, after which the finest bunches are selected and dried for 120 days to concentrate their flavours. Vinification begins with a low-temperature pre-fermentation maceration. Spontaneous fermentation then takes place on the skins for more than 90 days, without added yeast, contributing greater aromatic complexity.
Ageing
The wine matures for 48 months in 50 hl Slavonian oak barrels, followed by 24 months in bottle.
Tasting profile
Elegant and measured in intensity, the wine combines power with balance. Ageing brings notes of chocolate and spices, while the texture becomes more balanced and delicate.
Serving and pairing
Pair with grilled meat served with a berry sauce.
