Late-harvest Chardonnay from Tenuta Serra dei Fiori in the municipality of Trezzo Tinella.
Grapes
100% Chardonnay. Only the finest must obtained by gentle pressing—the fiore del mosto—is used. As the ace is the highest-value playing card, Asso represents the estate’s highest expression.
Vinification
Following gentle pressing, the must is clarified and settled. Fermentation then takes place in oak casks.
Ageing
The wine remains in oak casks for eight months, followed by another eight months of maturation in bottle.
Tasting profile
Broad and enveloping, with pronounced fruit and vanilla aromas and an emerging smoky nuance. The palate is rich and satisfying, balancing ripe fruit with oak-derived notes.
Serving and pairing
Serve at 10–12 °C. Pair with starters, fish dishes, white meats and fried preparations.
