Vineyard and terroir
The fruit comes from the producer’s vineyards on the historic hill known as Col de Mez, within the Asolo Prosecco DOCG area of northeastern Italy.
Vinification
The grapes are harvested by hand in September. Whole bunches are gently pressed at the winery, followed by a very slow, temperature-controlled fermentation in stainless-steel tanks using selected yeasts. The wine is then filtered, and secondary fermentation takes place in pressure tanks.
Serving and pairing
Suitable as an aperitif and with fish appetizers, herb risotto or grilled vegetables.
