Vinification
The grapes undergo cold maceration to retain their fresh aromatic character. Fermentation then continues on the skins for approximately 20 days at 25°C, developing structure without excessive extraction.
Ageing
Ageing takes place in stainless-steel tanks, maintaining a clean, fruit-led profile. The wine is bottled for immediate enjoyment.
Tasting profile
Brilliant ruby red with violet highlights. The nose is fresh and clean, with cherry, raspberry and other small red-fruit aromas. The palate is soft and savoury, showing strawberry, gentle freshness and discreet, unobtrusive tannins.
Serving and pairing
Serve at 18–20°C. Suitable for pasta with ragù and other red sauces, grilled or braised red meats, mixed cured meats, medium-aged cheeses and blue cheeses. Suggested dishes from Ristorante Da Pode are Fiorentina alla griglia, Tartara di Pode and Maiale alla cacciatora.
