Vineyard and terroir
The wine comes from the estate's vineyards around Tenuta Sovestro in San Gimignano. The 2025 release is presented as a direct expression of the territory and the historic Vernaccia di San Gimignano denomination.
Vinification
The grapes are picked manually at full ripeness, gently pressed and clarified by static gravity settling. Fermentation takes place in stainless-steel tanks at controlled temperature.
Ageing
Ageing continues in stainless steel to retain aromatic integrity, freshness and finesse.
Tasting profile
Straw yellow with green highlights. The nose is fine and delicate, with fruit and floral notes. The palate is savoury, dry and fresh, combining good structure with an easy-drinking, dynamic finish. The 2025 vintage has a particularly fresh, vertical, elegant and immediate profile.
Serving and pairing
Serve at 10–12°C. Suitable as an aperitivo and with antipasti, vegetable dishes, fish, sushi, white meats, and fresh or medium-aged cheeses. Suggested estate-restaurant dishes are pecorino flan with porcini mushrooms, Antipasto Pode and pici all’aglione.

The 2025 vintage emphasizes freshness, verticality and an elegant, immediate character, intended both for the table and drinking on its own.
